I got this pan and the Amco Food Service Sliding Cover for Pullman Pan as a Xmas present. It is well-constructed, bakes bread evenly, releases the bread easily when done, and cleans-up with no scrubbing. It is a better-than-average pan at a very reasonable price.
Today I used the pan and cover to bake pain de mei for the first time, following the King Arthur Flour recipe. I turned out wonderfully - an excellent fine-grained (and quite square) sandwich loaf. I can easily see some other possibilities, such as a cinnamon-raisin bread for French toast or thin-sliced bread for melba toast.
Description of Focus Foodservice Commercial Bakeware 1 1/2 Pound Pullman Pan
Amco Pullman Pan is manufactured to meet the exacting standards of the toughest commercial bakeries and food service establishments. Each pan is crafted from heavy-gauge aluminized steel, a 3-ply material consisting of two layers of tough corrosion-resistant 3003 aluminum alloy around the durability, strength and superior heat conduction of carbon steel. The frame is supported by a thick, coated reinforcing wire to give the pan additional strength and insure greater durability. Pan has a silicone coating that provides for easy release of baked goods.
